The restaurant has grown into an eatery specializing in cuisine from the Indian princely states of Gujarat and Rajasthan.
The restaurant specializes in Thalis which mainly include an appetizing drink of fresh buttermilk or spiced water with roasted cumin seeds (Jaljeera), two varieties of hors d’oeuvres (Farsan), two vegetables, one pulse preparation (Kathol), three varieties of hot-from-the-griddle Indian bread (Baajri ki Roti, Bhakri, Phulka), a mildly-sweet Gujarati style tuvar daal, a mild spicy-sweet gravy in a yogurt base (Kadhi), Rice, a nutritious mixture of rice and pulsed (Kichdi).
The choice of cuisine was further enlarged in 2001 by introducing a Multi-cuisine to supplement the ongoing Gujarati and Rajasthani food. Buffet service was added to the sit-down Thali service.
The Chetana restaurant is mainly dedicated to maintain customers’ environmental, spiritual and physical well-being through a commitment to excellent vegetarian cuisine served in a vibrant and friendly atmosphere.
